3 Fresh New Ways To Use Avocado In Your Cooking

Avocadoes are an incredibly popular addition to a wide number of dishes due to their creamy texture, slightly nutty flavour and versatility. They are most often associated with guacamole, but they can also be fried, grilled, puréed, mixed in salads and spread on toast. They can even be eaten alone as a snack (some people swear by salt and lime, others turn it into a dessert with honey). Avocados are a fantastic source of Vitamin C, riboflavin, thiamine and unsaturated fat, but maybe you’ve run out of ideas for how to cook and eat them? Here are 3 new ways to use avocadoes in your cooking:
1. Chicken-stuffed Avocado – This is a popular dish in South America that is criminally unknown anywhere else. Simply mix shredded cooked chicken with mayonnaise, cut an avocado in half, remove the seed and top the avocado halves with the chicken mix. Finish with a garnish of spring onions. It’s an easy summer dish, and is super tasty!
2. Avocado Pizza – You wouldn’t usually think that avocado belonged on pizza (probably a more controversial take than pineapple!), however you might be surprised. Next time you make homemade pizza, try a base of mashed avocado and mozzarella cheese topped with caramelised onion and grilled chicken.
3. Avocado Brownies – Yep, you heard that right! It may sound unorthodox, but avocado makes a great butter substitute in baking. Avocado Brownies are dairy-free – all you need to do is swap butter for one ripe mashed avocado (about half a cup).
