The Jambalaya Festival Association is mourning the passing of Wally Taillon, a pivotal leader and community ambassador for over two decades. Taillon was instrumental in the festival's relocation and growth, solidifying its presence and bringing recognition to the region.
  • Wally Taillon, affectionately known as "Mr. Wally," served as a long-time leader and ambassador for the Jambalaya Festival Association (JFA). He is remembered as the "face of the JFA" and a champion cook.
  • In 1999, Taillon was responsible for relocating the festival back to Gonzales on Irma Boulevard, after several years of venue changes following its move from Burnside Avenue.
  • He led the JFA for more than 20 years, significantly contributing to the annual festival's success and expansion, which in turn increased visibility for Gonzales, Ascension Parish, and Louisiana.
  • Taillon mentored many members, sharing his extensive knowledge of jambalaya. The JFA was described as his true passion.
  • He was a recipient of the City of Gonzales Citizen of the Year award and famously cooked jambalaya at the New Orleans Jazz and Heritage Festival and other locations.
  • Taillon passed away on May 25th at the age of 80, the day after the 59th annual Gonzales Jambalaya Festival concluded.
  • A tribute to Taillon was delivered by festival announcer Todd Long during the Memorial Day weekend event.
